it in the army during the war, so NEVER
AGAIN! Ha ha ha.

Here is her Spam Story! CONGRATS.
In the early 80’s my husband was in the army
and got his orders to Korea. Well, we tried
being apart for a few months but that just was
not working, so I took my 4 year old got on a
plane and went to live in Korea. At that time
meat was a very precious commodity but there
was plenty of SPAM. We ate spam weekly for
52 weeks, we had it for Thanksgiving with canned
peaches cooked on top…now mind you I had no
stove, just a hot plate and a crock pot (which I had
to fight for). I cooked SPAM every which way possible.
I have had none since but now that you mention it,
I would kind of like a fried SPAM sandwich.

My husband is Samoan and we make spam musubi.
It is like sushi but with spam in it instead. There are many
ways to make it but here’s how we do it.
Cook white rice and let cool a little
Take a can of spam and slice it thin
(not too thin but about 1/8” thick)
Put soy sauce and brown sugar into a
frying pan and mix together
Add the spam and cook until soy sauce
mixture reduces making a thick sauce
Take a piece of seaweed, add rice, add spam
with a touch of the sauce and roll like you do sushi –
be careful not to add too much sauce as this will
cause the seaweed to break

Eat and enjoy
Believe it or not, but they actually have a spam musubi
press to make it easier to make. And yes, we have 2 of them.
You should try it, it is pretty good.

CONGRATS!
When my mother-in-law lived in southern California years ago,
she and her husband used to stop at a little place along the
beach and order these “ham sandwiches”.
It wasn’t for several years that she found out that they were
really SPAM-wiches. Here’s the receipe, hope everyone enjoys
them, not exactly lo-cal, but they are great!
Ham Salad spam-wiches
1 can of SPAM, grated
6 hard boiled eggs, grated
1 bunch of green onions, chopped
½ to ¾ lb of cheddar cheese, grated
1 small can of chopped Ortega chilis
1 small can of tomato sauce
Mix together. Take a 6”-8” French roll and cut in half.
Scoop out the center fill with the mixture.
Bake, open faced, in 350º oven for 10-15 minutes.
Allow to cool only slightly, slice and serve.

So the other night Carol and I went to see a play…A Prayer for Owen Meany..very good. When we got home we discovered that Bailey, one of our dogs, had not been good. Carol the day before had just baked two loaves of Banana bread, one with chocolate chips. We placed them way back on the counter in the kitchen so Bailey, the big dog, would not get at them. Well you guessed it , he got both of them. I was freaked, I couldn’t sleep all night long,I heard Bailey walking around. I was sure he was going to do something really nasty in the house because he was sick. Well , he never got sick thank goodness. Plus he got the last laugh, he finally went to sleep and I couldn’t…awake..until I came to work. Oh, don’t forget, he also got all of the delicious Banana bread !!

Glad you all survived the big Spring storm. I had about 20 inche at my place, thank goodness for Big Red. That’s my hugh snow blower, I don’t get use if often but when I need it ..WOW. Plus all my neighbors want me to do their driveways, which of course I do. I always like to help, plus I love the free beer they give me to say thanks. Hey need a good laugh today?
